Commis – Chinese Cuisine – General Responsibilities

Responsibilities:

  • Demonstrate passion about food and ingredients in every moment.
  • Assist that outlet and events run efficiently according to the established concept statements and adhere to company and hotel policies and procedures.
  • Assist in high quality service and food production standards in outlet and events.
  • Follow the guidelines for plating and buffet presentations.
  • Ensure all processes maintain HACCO and ISO2200 standards. Report any non‑conformance to the manager on shift.
  • Assist the Stewarding Operation in kitchens and restaurants to achieve the highest possible hygiene standards, minimize operating equipment breakage, and streamline resources.
  • Ensure only fresh products are used in food and beverage preparation.
  • Assist testing food and beverage in outlet and be critical about quality.
  • Implement food safety programs and procedures.
  • Always practice safety in handling food.
  • Perform personal and environmental hygiene in food and beverage business.
  • Be flexible in your job function and perform any other reasonable duties and responsibilities assigned, including redeployment to other departments.

Qualifications:

  • Indonesian Nationality with a degree in Hospitality or Business Management.
  • Experience in authentic Chinese cuisine.
  • Minimum 1 year experience in a similar position in a five star international hotel chain.
  • Previous experience in luxury hotel or international experience is an advantage.
  • Strong leadership and business acumen.
  • Excellent English communication skills, strong guest service mindset and people management & development skills.
Mandarin Oriental Jakarta – Commis de cuisine

Mandarin Oriental Jakarta is seeking a Commis de cuisine to join our kitchen team. The role reports to the Sous Chef (Li Feng – Chinese Restaurant) and focuses on assisting senior chefs in food preparation and related tasks.

Key Responsibilities:

  • Daily Operational
    • Supervise the assigned station within Li Feng – Chinese Restaurant, ensuring efficient management.
    • Oversee assigned kitchen trainees.
    • Prepare menus using quality, available, and seasonal ingredients, and complete daily and weekly market lists.
    • Perform opening and closing procedures for the assigned station.
    • Carry out additional duties as reasonably requested by the Executive Chinese Chef.
  • Productivity
    • Organize food production in a cost‑effective and hygienic manner.
    • Identify opportunities for reducing costs without affecting service or product level.
    • Identify opportunities for improving efficiency that benefit our guests.
  • Safe and Sound (HACCP)
    • Ensure that fire, life, health, safety, security company standards and HACCP standards are maintained.
    • Monitor regularly to assist in scoring 100% on the MOHG health and safety audit.
    • Maintain all efforts that uphold safe and sound codes.
  • People
    • Use the Colleague Handbook to communicate rules and regulations to our team.
    • Supervise kitchen trainees.
    • Develop skills and knowledge in food preparation and presentation.

Qualifications & Experience:

  • High school diploma or equivalent; two‑year degree or apprenticeship acceptable.
  • Minimum 1 year experience in the same position (Commis Chinese Restaurant), preferably in hospitality.
  • Thorough knowledge of gastronomy and extensive kitchen equipment knowledge.
  • Working knowledge of computers and basic software.
  • Ability to take responsibility, pay attention to detail, handle multiple tasks, and show patience.
  • Good written and verbal command of English.
  • Pleasant and outgoing personality.
  • Passionate, creative, and an excellent hands‑on trainer.

Goasaya – Commis Chef

Goasaya is a new luxury dining destination in PIK 2. We’re looking for passionate commis chefs to join our kitchen team.

Responsibilities:

  • Assist CDP and Sous Chef in daily food preparation and plating.
  • Maintain cleanliness, organization, and hygiene in the kitchen.
  • Prepare ingredients, mise en place, and ensure stations are ready before service.
  • Learn and follow recipes, standards, and SOP from the Head Chef.
  • Support kitchen operations during photo shoots and service.

Requirements:

  • Minimum 1–2 years experience in restaurant kitchens (fine dining preferred).
  • Passionate, disciplined, and eager to learn.
  • Understand basic cooking techniques and kitchen workflow.
  • Available to start immediately and work full‑time at PIK 2.
