About the Role
Hakuren Group is seeking a talented and creative Head Pastry Chef to lead our pastry team in delivering world-class desserts and confections. This position calls for a passionate leader with expertise in both classic and modern pastry techniques, capable of designing innovative menus and inspiring excellence in a fine dining environment.
Key Responsibilities
• Menu Innovation: Conceptualize and develop dessert menus that reflect seasonality, creativity, and the restaurant's culinary vision.
• Culinary Execution: Prepare and plate desserts with precision, ensuring consistency in taste, texture, and presentation.
• Ingredient Selection: Source and work with premium, seasonal, and specialty ingredients to elevate the pastry offering.
• Team Leadership: Manage, train, and mentor the pastry team to uphold high standards of skill, creativity, and efficiency.
• Collaboration: Partner with the Executive Chef and broader kitchen team to create a seamless dining experience and cohesive menus.
• Quality Assurance: Conduct tastings, monitor performance, and maintain uncompromising quality control across all pastry items.
• Trend Awareness: Stay informed on global pastry and fine dining trends, introducing innovative techniques and concepts to the menu.
• Cost & Inventory Management: Oversee stock levels, control food costs, and minimize waste while ensuring top-quality results.
• Event & Special Menus: Design bespoke desserts for tasting menus, private dining, and special occasions.
• Health & Safety: Ensure strict adherence to hygiene, food safety, and sanitation standards at all times.
Qualifications
• Formal training in pastry arts, ideally from a recognized culinary school.
• Minimum of 5 years' experience in a senior pastry role within fine dining or luxury hospitality.
• Expertise in advanced pastry techniques, including chocolate work, sugar art, and plated desserts.
• Proven track record of leading and developing a pastry team.
• Strong creativity, attention to detail, and passion for innovation.
• Excellent organizational and leadership skills, with the ability to manage time, costs, and resources effectively.
