Job Purpose

Develop recipes, oversee the comprehensive bakpia production process, and ensure consistency and hygiene standards matching the company brand identity.

Tasks & Responsibilities
  • Recipe Innovation

    • Create new bakpia variations to meet market trends and brand strengths (healthy, premium, heritage).
    • Improve existing recipes for consistency in flavor, texture, and appearance.
  • Production Control

    • Oversee entire production process from preparation, dough making, filling, to baking.
    • Ensure each batch meets SOP and quality standards.
    • Set precise ratios, temperatures, and baking times for each bakpia type.
  • Quality Assurance

    • Conduct taste tests regularly.
    • Oversee product presentation according to visual standards (color, shape, size).
    • Implement food safety and hygiene standards as per industry regulations.
  • Team Management

    • Mentor and train junior bakers and the production team.
    • Assign tasks in the kitchen efficiently.
    • Be a role model of discipline and professionalism.
  • Ingredient & Equipment Management

    • Determine daily/weekly raw material needs.
    • Monitor ingredient quality and recommend best suppliers.
    • Maintain and ensure production equipment (oven, mixer, scales) operate properly.
  • Reporting & Evaluation

    • Create daily/weekly production reports.
    • Provide management suggestions on production efficiency, cost control, and product innovation opportunities.
Qualifications
  • Minimum D3/S1 in Culinary, Hospitality, or equivalent experience.
  • At least 3 years as a professional baker in bakery, pastry, or traditional food industry.
  • Master bakery techniques modern & traditional (dough, fermentation, baking).
  • Creative, innovative, and strong sense of taste.
  • Leadership capability and maintain high quality standards.
