Overview
The Quality Control Controller is responsible for ensuring that all finished cake products meet company, customer, and regulatory standards for safety, quality, and legal compliance. This role involves inspecting, testing, and monitoring products and processes at the final stages of production to maintain the high integrity of our brand and prevent defective products from reaching the market.
Key ResponsibilitiesFinished Product Inspection and Testing
- Conduct pre-shipment and final quality checks on all finished cake products (e.g., appearance, aroma, texture, taste, weight, dimensions) against established product specifications.
- Perform routine packaging integrity checks, including seal strength, correct labeling (e.g., lot codes, expiry dates, allergens), packaging material quality, and presentation.
- Collect and submit finished product samples for laboratory analysis (e.g., microbiological, chemical, nutritional) as per the QC schedule.
- Document and analyze inspection and test results, identifying any non-conformances or trends.
Process Monitoring and Compliance
- Monitor the final production line to ensure Good Manufacturing Practices (GMP) and Standard Operating Procedures (SOPs) are strictly followed by production staff.
- Verify critical control points (CCPs) related to the finished product, such as proper cooling or final metal detection checks, are maintained and documented as part of the HACCP/Food Safety Plan.
- Verify calibration of final production and quality monitoring equipment.
Non-Conformance Management
- Isolate and place on hold any finished product batches that do not meet quality or safety standards.
- Work with production teams to conduct root cause analysis for finished product defects and recommend and implement immediate corrective and preventative actions (CAPA).
- Prepare detailed Dispositions for non-conforming product (e.g., rework, destruction, release).
Documentation and Reporting
- Maintain accurate, legible, and timely records of all quality control checks, test results, and corrective actions.
- Prepare daily, weekly, or monthly QC reports summarizing production quality, common defects, and compliance status for management review.
- Assist in preparing for and participating in internal, customer, and regulatory audits.
- Education: High school diploma or GED required. An Associate's or Bachelor's degree in Food Science, Chemistry, Biology, or a related field is highly preferred.
- Experience: 1-3 years of experience in a Quality Control role within the food manufacturing industry, preferably in a patisserie or confectionery environment.
- Knowledge: Strong understanding of HACCP, GMPs, and relevant food safety regulations.
- Skills: Excellent attention to detail, strong analytical and problem-solving skills, and the ability to work independently and as part of a team. Proficiency in using standard inspection tools and quality documentation software.
