Role Description
This is a full-time, on-site role based in the Jakarta Metropolitan Area for a Japanese Chef de Cuisine. The chef will oversee the preparation of authentic Japanese cuisine, manage kitchen operations, and ensure high food quality standards. Responsibilities include menu planning, ingredient selection, training and supervising kitchen staff, maintaining hygiene and compliance with food safety standards, and collaborating with other departments to create an exceptional dining experience for guests. The role also involves cost control, inventory management, and ensuring customer satisfaction with creative and exceptional dishes.
Qualifications
- Extensive experience in preparing modern Japanese cuisine, harnessing traditional cooking techniques and ingredient knowledge.
- Strong skills in kitchen management, including training, leading, and supervising kitchen teams effectively.
- Expertise in menu development, food presentation, and cost control with a focus on maintaining high-quality standards.
- Thorough understanding of food safety regulations, cleanliness, and hygiene practices in a culinary environment.
- Strong communication, organizational, and time management skills to collaborate with team members and other departments.
- Creative and innovative mindset with the ability to adapt to modern culinary trends while honoring traditional Japanese culinary heritage.
- Relevant culinary certifications or professional training in Japanese cuisine is mandatory
- Experience working in an independent luxury dining environment is highly desirable.
